Creamy Avocado Zucchini Pesto Pasta

Ingredients

  • 1 box (8 oz) rigatoni (use whatever pasta you want)
  • 1/4 cup pesto
  • 1/4 avocado
  • 1/2 medium zucchini
  • 2 mushrooms
  • 1/2 tsp paprika
  • 1/4 tsp black pepper

Preparation

  1. Cook pasta according to package instructions and save a little pasta water.

  2. Saute zucchini and mushrooms in a little olive oil until zucchini is cooked.

  3. In a small processor, blend pesto, zucchini, and avocado.

  4. In medium saucepan over medium heat, add 1/4 cup pasta water and all the pesto, then reduce heat.

  5. Add pasta, mushrooms, paprika, pepper, and salt to taste.

  6. Top with avocado and dried herbs and enjoy.
