Creamy Avocado Zucchini Pesto Pasta
Ingredients
- 1 box (8 oz) rigatoni (use whatever pasta you want)
- 1/4 cup pesto
- 1/4 avocado
- 1/2 medium zucchini
- 2 mushrooms
- 1/2 tsp paprika
- 1/4 tsp black pepper
Preparation
Cook pasta according to package instructions and save a little pasta water.
Saute zucchini and mushrooms in a little olive oil until zucchini is cooked.
In a small processor, blend pesto, zucchini, and avocado.
In medium saucepan over medium heat, add 1/4 cup pasta water and all the pesto, then reduce heat.
Add pasta, mushrooms, paprika, pepper, and salt to taste.
Top with avocado and dried herbs and enjoy.
