Easy Chicken Vegetable Soup
Ingredients
- 3 pieces chicken
- 1 onion
- 1 carrot
- 2 potatoes
- 2 tomatoes
- 2 cloves garlic
- 1/2 cup olive oil
- 1/2 teaspoon curry or turmeric
- 1 slice lemon
- 1 liter water
Seasonings
- 1 teaspoon black pepper
Garnish
- Parsley
Preparation
Chop the vegetables coarsely and place them in a pot.
Add the chicken pieces on top.
Include one slice of lemon.
Add olive oil, salt, and curry or turmeric, then pour in the water.
Cover the pot and cook until the chicken and vegetables are done.
Remove the chicken to a separate plate.
Blend the vegetables until smooth; you may remove the lemon slice before blending if desired.
Shred the chicken and add it back to the pot.
Stir in finely chopped parsley and black pepper.
If the soup is too thick, add some hot water to adjust the consistency.
Serve and enjoy.
