Eggplant Vegetable Stew

Ingredients

  • 5 eggplants
  • 1 onion
  • 1 red bell pepper
  • 3 green peppers
  • 3 garlic cloves
  • 1 tablespoon hot pepper paste (or sweet pepper paste)
  • 3 medium tomatoes
  • 1 cup water
  • Salt
  • Red pepper flakes

Preparation

  1. Peel the eggplants in a striped pattern, chop them, soak in salted water for 15 minutes, rinse, dry, and fry along with 6-7 peppers until browned.

  2. In a pan, add oil and sauté the onion and the chopped peppers.

  3. Add the chopped tomatoes and garlic, then add the pepper paste and stir until combined.

  4. When the tomatoes soften, gradually add water, add salt and red pepper flakes, cover, and bring to a boil.

  5. Add the fried eggplant and pepper mixture, cover, and cook on low heat for 10 minutes.
