Turkish Zucchini and Meat Stew
Ingredients
- 4 zucchinis
- About 1/2 cup sunflower oil
- 250 grams ground meat
- 1 onion
- 4 green peppers
- 1 red bell pepper
- 3 tomatoes
- 1 tablespoon tomato paste
- 1 cup hot water
- Salt to taste
- Red pepper flakes to taste
- Black pepper to taste
- Red pepper powder to taste
For garnish
- Parsley or dill
Preparation
Heat oil in a large pot over medium heat.
Add chopped onion and sauté until translucent.
Add chopped green and red peppers and cook for a few minutes.
Add ground meat and brown it, breaking it apart with a spoon.
Stir in chopped zucchini and tomatoes.
Add tomato paste, hot water, and spices to taste.
Simmer the mixture until vegetables are tender, about 20-30 minutes.
Garnish with chopped parsley or dill before serving.
