Greek Spinach Rice with Feta and Mint

Ingredients

  • 1 onion, chopped
  • 3 tbsp olive oil
  • 4 cups fresh baby spinach, chopped
  • juice of half lemon
  • 1/2 tbsp salt
  • 1 tsp dried mint
  • 1 cup long grain rice
  • 1 1/2 cups hot veg stock
  • feta to serve on top
  • parsley to garnish

Preparation

  1. Put 2 tbsp olive oil in a large pan, add the onions and cook for about 7 minutes over a medium heat

  2. Add the spinach and cook till wilted.

  3. Add the mint, salt and lemon juice. Remove the spinach mix from the pan and set aside

  4. Add the third tbsp oil to the same pan and add the rice. Coat the rice in the oil.

  5. Add the vegetable stock, bring to a simmer, cover and cook till all the water is absorbed which takes about 8 minutes

  6. Add the rice to the spinach mix and using a fork or spatula combine well

  7. Top with crumpled feta and garnish with fresh parsley.
