Healthy Vegan Blueberry Cake

Ingredients

Base

  • 1/2 ripe banana
  • 3 tsp cacao powder
  • 1 medjool date
  • 3 tbsp ground almonds
  • 3 tbsp oats
  • 1 tbsp almond butter

Agar agar mixture

  • 150 ml water
  • 1 tsp agar agar

White layer

  • 1/2 ripe banana
  • 1 tsp vanilla extract
  • 3 tbsp vegan curd

Blueberry layer

  • 150 g blueberries
  • 3 tbsp vegan curd

Topping

  • blueberries
  • almonds

Preparation

  1. Mash the banana first and split it into two bowls.

  2. Use one bowl to add the base ingredients and slice the date.

  3. Fill the other bowl with the ingredients for the white layer except the agar agar water mixture.

  4. Mix the blueberries with a blender and add the curd.

  5. Boil 150 ml water together with 1 tsp agar agar powder and split the mixture, adding 3 tbsp to each filling.

  6. Cover a cake tin with parchment paper, add the base, and press it firmly across the tin.

  7. Fill in the white layer, then add the blueberry layer and let it cool in the freezer for 2 hours before moving to the fridge for another hour.

  8. Top it with crushed almonds and blueberries.
