Vegan Raspberry White Chocolate No Bake Cake Inspired
Ingredients
- ~~crust:~~
- 1 cup oats
- 1.5 cups almonds
- 1 cup dates (packed)
- 2 tbsp cacao butter
- 1 tbsp cacao powder
- 1 pinch of vanilla
- 1 pinch of salt
- ~~white chocolate layer:~~
- 2 cups almond milk
- 3 tsp agar agar
- 1.5 cups coconut cream (refrigerate coconut milk overnight and use the solid part only)
- 3/4 cup cacao butter
- 3/4 cup agave syrup
- 1 pinch vanilla
- ~~raspberry layer:~~
- 2 cups almond milk
- 3 tsp agar agar
- 1 cup coconut cream
- 1.5 cups raspberry puree (just blended raspberries, passed through a sieve)
- 1/2 cup agave syrup
- 1 pinch of vanilla
Preparation
Place oats and almonds in a food processor/blender and process until finely ground
Add all the other ingredients and process until a sticky dough forms
Press the dough into a tart tin (22 cm tin) and let it set in the refrigerator
Pour almond milk and agar agar in a saucepan and bring to boil, stir continously and let it simmer for 1 minute
Add the other ingredients, let stand for 1 minute, then stir until smooth and creamy
Pour the mixture on the crust layer and let it set in the fridge for at least 30 minutes
Pour almond milk and agar agar in a saucepan and bring to boil, stir continously and let it simmer for 1 minute
Stir in the other ingredients until well combined
Let it cool until it has room temperature, then pour onto the other layers
Let it set in the fridge for at least 30 minutes
The top layer is just some melted chocolate mixed with raspberries.
