Raw Vegan Blueberry Cheesecake
Ingredients
Brownie
- 2 cups of hazelnuts
- 1/2 cup of whole blanched almonds
- 2 cups of medjool dates, pitted
- 3/4 cup of cacao powder
- 1/3 cup of rice malt syrup
Wild blueberry layer
- 3 cups of soaked cashews
- 1/2 cup of maple syrup or rice syrup
- 1/2 cup of coconut cream
- 1 cup of wild blueberry juice
- 1/4 cup of almond milk
Preparation
Soak the cashews for several hours or overnight
Cook wild blueberries on the stovetop and strain to obtain 1 cup of juice
Blitz all the dry ingredients for the brownie in a food processor.
Add the wet ingredients for the brownie and blitz again. Test if the batter is sticky.
Press the brownie mixture into the bottom of a 9-inch springform pan. Freeze.
Blitz all the ingredients for the wild blueberry layer.
Pour the blueberry mixture onto the frozen brownie layer. Freeze overnight with your choice of toppings.
