Raw Vegan Blueberry Cheesecake

Ingredients

Brownie

  • 2 cups of hazelnuts
  • 1/2 cup of whole blanched almonds
  • 2 cups of medjool dates, pitted
  • 3/4 cup of cacao powder
  • 1/3 cup of rice malt syrup

Wild blueberry layer

  • 3 cups of soaked cashews
  • 1/2 cup of maple syrup or rice syrup
  • 1/2 cup of coconut cream
  • 1 cup of wild blueberry juice
  • 1/4 cup of almond milk

Preparation

  1. Soak the cashews for several hours or overnight

  2. Cook wild blueberries on the stovetop and strain to obtain 1 cup of juice

  3. Blitz all the dry ingredients for the brownie in a food processor.

  4. Add the wet ingredients for the brownie and blitz again. Test if the batter is sticky.

  5. Press the brownie mixture into the bottom of a 9-inch springform pan. Freeze.

  6. Blitz all the ingredients for the wild blueberry layer.

  7. Pour the blueberry mixture onto the frozen brownie layer. Freeze overnight with your choice of toppings.
