Vegan Peanut Butter Swirl Brownies

Ingredients

  • 3 flax eggs (3 tbsp flaxmeal + 9 tbsp Oat Milk/Water)
  • 1/2 cup coconut oil, melted
  • 1 cup coconut sugar
  • 1/2 cup Pureharvest Rice Malt Syrup
  • 1 tsp vanilla extract
  • 1 cup plain flour
  • 1/2 cup cacao powder
  • 1/2 cup almond meal
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 100 g dark chocolate chips
  • 1/3 cup smooth peanut butter

Preparation

  1. Make the flax meal by mixing together the ground flax meal and water and set aside to thicken.

  2. Preheat the oven to 180 C. Grease and line a baking tray (roughly 20cmX20cm) with baking paper.

  3. Mix together the melted coconut oil, coconut sugar, rice malt syrup and vanilla in a bowl. Add the flax eggs and whisk to combine.

  4. Sift together the flour, cacao powder, almond meal, baking powder and sea salt together in a separate bowl.

  5. Fold through the flour mixture with the wet mixture. Mix through the chocolate chips. Pour into the prepared baking tray.

  6. Melt the peanut butter in the microwave or in a bain-marie until warm and runny. Spoon dollops onto the brownie mixture and using a knife or skewer create a swirl of peanut butter on the top of the brownie.

  7. Bake in the oven for 20-25 minutes or until the centre of the brownie no longer wobbles. Be careful not to over bake as it will result in a dry brownie.
