Vanilla and Almond Squares with Chocolate Cashew Icing

Ingredients

Bars

  • 1 cup ground almonds
  • 1/2 cup oats
  • 1/3 cup coconut flour
  • 1/2 cup brown sugar
  • 2 flax seed eggs
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla paste (or extract)
  • 1/2 cup @califiafarms unsweetened vanilla almond milk
  • 1/2 cup almond butter
  • 1/3 cup coconut oil, melted

Icing

  • 1 cup of cashews (soaked for 4 hours)
  • 1 tbsp lemon juice
  • 1/4 cup maple syrup
  • 1 tsp vanilla bean paste
  • 1 tbsp cacao powder
  • 1 tbsp melted coconut oil

Preparation

  1. Preheat the oven to 180 degrees Celsius and line an 8x8 baking tin with baking paper.

  2. In a bowl, mix together the ground almonds, oats, coconut flour, sugar and baking powder.

  3. Add the rest of the ingredients and mix well.

  4. Pour into the prepared tin and use your hands to make sure the mix is covering the base.

  5. Bake in the oven for 20 minutes.

  6. Add all the icing ingredients into a food processor and blend or pulse until well combined.

  7. Wait until the bars are completely cool before topping them with the icing.

  8. Once iced, slice into squares and enjoy.

  9. Note: keep in an airtight container in the fridge.
