Vegan Baked Donuts with White Chocolate Frosting

Ingredients

Dough

  • 100ml soy milk
  • 50ml maple syrup
  • 1/2 tsp apple cider vinegar
  • 60g apple sauce
  • 100g whole grain spelt flour
  • 1 scoop vanilla protein powder
  • 2 tsp baking powder

Frosting

  • 80g vegan white chocolate
  • 1 tsp coconut oil
  • 1/2 tsp aronia berry powder

Preparation

  1. Preheat oven to 180°C(350F)

  2. Mix together wet ingredients in a small bowl.

  3. In a bigger bowl add all dry ingredients and mix as well. Add wet to dry ingredients and whisk together.

  4. Grease a muffin tin and fill in the dough. Bake for about 18 minutes.

  5. Let them cool down then remove them from the form.

  6. Meanwhile melt the chocolate over a waterbath. Add 1 tsp of coconut oil and berry powder and mix.

  7. Dip the Donuts into the melted chocolate and place them on a cooling rack. Optionally decorate them with some coconut shreds and more berry powder.
