No Bake Snickerdoodle Bites

Ingredients

  • 1/2 cup cashew butter
  • 1/4 cup maple syrup
  • 1 tbsp vanilla protein
  • 1 tsp cinnamon

Preparation

  1. Mix everything together well then line a pan with parchment paper

  2. Use a cookie scoop, scoop out the batter and roll into balls

  3. Place them all on a the baking pan and put in the fridge for an hour

  4. Icing recipe: 1/2 tbsp almond milk, 1/2 tbsp coconut butter, 1/2 tbsp maple syrup

  5. Melt the ingredients together for 30 seconds in the microwave, mix, then repeat melting and stirring every 15 seconds until it’s melted. You want to let it thicken just a little bit before adding to the donut holes so it sticks better

  6. Once the donut holes have hardened, roll in the icing mixture. Then mix together: 1/2 tbsp coconut sugar + 1 tsp cinnamon. Sprinkle them with this mixture. Place back in the fridge for another hour to harden. Store in the fridge for 4-5 days
