Pasta with Spicy Red Sauce
Ingredients
- 2 cups cooked/canned white beans, rinsed and drained
- 1/2 an onion, diced
- 3 garlic cloves, minced
- 1 tbsp white balsamic vinegar
- 1 tsp dry basil
- 1/2 tsp dry oregano
- 1 tsp smoked paprika
- 1/2 to 1 tsp crushed red pepper
- 1 tbsp nutritional yeast
- 2 tsp brown sugar
- 1 cup vegetable broth
- 4 servings pasta
- 1/2 cup pasta water
- 1/4 tsp salt
Preparation
In a sauce pan, add onion and sauté u TIL translucent
Add in garlic and sauté until fragrant
Add in tomato paste, oregano, basil and smoked paprika and stir while cooking for about 1-2 minutes
Add in white beans, sugar and broth and allow to cook and thicken for about 5 minutes on low medium heat
Add in balsamic vinegar and nutritional yeast and stir to combine
Allow to sit on low heat while you prepare the pasta (at this time you can also add greens like spinach in to wilt)
Prepare pasta according to package
Reserve 1/2 cup pasta water prior to draining pasta
Once pasta is drained add pasta to the sauce along with pasta water and salt
Stir to combine and allow to thicken, about 1-2 minutes
Remove from heat and serve
