Quick Weeknight Pasta Puttanesca

Ingredients

  • 28 oz crushed tomatoes
  • 6 cloves minced garlic
  • 1/2 yellow onion chopped
  • 1/4 cup packed fresh basil, minced
  • 2 tablespoons olive oil
  • 1/2 cup black olives
  • 1/4 cup sliced green olives
  • 1 box spaghetti noodles

Preparation

  1. Sauté garlic and onions with 1 teaspoon of olive oil for 2-3 minutes without browning

  2. Reserve the rest of the oil for later

  3. Add tomatoes

  4. Bring to a simmer and cook for 15 minutes over low heat

  5. Cook noodles to al dente and salt the water

  6. While noodles are cooking, add in basil and remaining olive oil

  7. Reserve 1/4 cup of pasta water and add it to the tomato sauce

  8. Drain noodles and add them to the tomato sauce

  9. Toss everything together and add in olives

  10. Let sit in the sauce for 5-10 minutes before serving
