Raw Kibbeh with Lentils
Ingredients
- 1 cup yellow lentils
- 2 cups fine or coarse bulgur
- 1/2 cup olive oil
- 2 cloves crushed garlic
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon crushed chili
- 1 teaspoon salt
- 3 green onions chopped with leaves
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1/2 cup chopped green mint
- 1 medium tomato, seeded and finely chopped
- 1 cup whole walnuts
Preparation
Wash the lentils, place them in a suitable pot, add 4 cups of water, a little salt and black pepper, and let it boil on medium heat until cooked and most water is absorbed, leaving about 1 cm of water on the surface.
Add the bulgur to the hot lentils, stir with the lentils, cover the pot, remove from heat, and leave for about 15 minutes for the bulgur to absorb all the water and double in size.
Add the oil, garlic, paprika, cumin, chili, onion, lemon zest, lemon juice, mint, tomato, and mix all ingredients together.
Take a little of the mixture and press it between your fingers to shape it like fingers, or shape it as desired into disks or fingers. You can serve it in a wide dish like raw kibbeh and press with a fork to decorate.
Place a walnut in the center of each shaped piece.
Serve on a layer of chopped lettuce with green mint and pickles or similar accompaniments.
