Rhubarb Sheet Pan Cake

Ingredients

  • 1/2 cup butter (vegan option available)
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup yogurt (dairy-free option)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 2 cups rhubarb (peeled and diced)

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Peel and dice rhubarb into 1-inch pieces until you have 2 cups.

  3. Cream together butter and sugar.

  4. Add egg and vanilla.

  5. In another bowl, whisk together flour, baking soda, and salt.

  6. Add half the flour mixture and half of the yogurt to the wet ingredients.

  7. Add the remainder of the ingredients.

  8. Fold in the rhubarb and gently mix.

  9. Spread the batter into a large baking dish or sheet pan lined with parchment paper.

  10. Bake for 50 minutes to 1 hour, checking after 50 minutes.

  11. Let cool, then slice and enjoy.
