Savory Spinach Waffles with Spices and Greens

Ingredients

  • Spelt flour - 2 1/2 cup
  • Soy milk or any plantbased milk - 1 cup
  • Flaxseeds powder - 2tbsp
  • Coconut oil - 1/3 cup
  • Baking powder - 1tsp
  • Salt according to your taste
  • Spinach - 1 cup puree (blanched and pureed)
  • Black pepper - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Garam masala - 1/2 tsp

Preparation

  1. Blanch spinach and make a puree

  2. In a bowl add spelt flour, baking powder, salt, black pepper, garam masala, cumin powder, flaxseed powder, and mix well

  3. Add spinach puree, coconut oil, soymilk, mix thoroughly, and let it sit for 5 minutes

  4. Heat waffle iron, brush with oil, add batter, spread evenly, and cook until done

  5. Serve with yogurt, chutney, avocado, fresh cherry tomatoes, or masala chickpeas and enjoy
