Slow Cooker Carrot and White Bean Soup
Ingredients
- 2 carrots, grated
- 3 sweet potatoes, peeled and cubed
- 1 cup white beans, soaked overnight
- 1 celery rib, thinly sliced
- 2 cups vegetable broth
- 1 teaspoon @casadesante cajun seasoning
- 1 cup plain unsweetened almond milk
- salt and pepper, to taste
Preparation
Set your slow cooker to a HIGH setting and add all the ingredients, season to taste.
Cover and cook for 3-4 hours.
Once the veggies are tender, transfer the soup to a high-speed blender and add milk, blend the soup until thick and pureed.
