Slow Cooker Carrot and White Bean Soup

Ingredients

  • 2 carrots, grated
  • 3 sweet potatoes, peeled and cubed
  • 1 cup white beans, soaked overnight
  • 1 celery rib, thinly sliced
  • 2 cups vegetable broth
  • 1 teaspoon @casadesante cajun seasoning
  • 1 cup plain unsweetened almond milk
  • salt and pepper, to taste

Preparation

  1. Set your slow cooker to a HIGH setting and add all the ingredients, season to taste.

  2. Cover and cook for 3-4 hours.

  3. Once the veggies are tender, transfer the soup to a high-speed blender and add milk, blend the soup until thick and pureed.
