Super Simple Zucchini Pie
Ingredients
Shortcrust pastry
- 100g wholemeal flour
- 120g flour
- 1 large pinch of salt
- 70g olive oil
- 60-70g water
Filling
- 1 zucchini (about 300g)
- 20cL soy cream
- 30g chickpea flour
- salt and pepper
- 1 pinch of dried herbs
Preparation
Preheat the oven to 180C
In a bowl, mix the flour and salt then add the oil
Start mixing so that all the flour is coated
Then gradually add the water until you can make a ball
Roll out the dough and line the pie dish
Bake the dough for 5 minutes
Cut the zucchini into thin slices
In a bowl mix the cream, the chickpea flour and add the zucchini slices
Season with salt and pepper and add the mixture of herbs
Fill the pie pan with the mixture and bake 25 to 30 minutes
