Simple Vegan Zucchini Gratin
Ingredients
- 600g zucchini
- 200mL soy cream
- 30g chickpea flour
- 75g plant-based yogurt
- salt and pepper
- vegan grated cheese or breadcrumbs
Preparation
Preheat the oven to 200°C.
Cut the zucchini into slices and place them in an oven-safe dish.
In a bowl, mix the soy cream, chickpea flour, plant-based yogurt, salt, and pepper with a whisk.
Pour the mixture over the zucchini, ensuring it covers evenly.
Cover with 2 handfuls of vegan grated cheese or breadcrumbs and bake for 40 minutes.
