Simple Vegan Zucchini Gratin

Ingredients

  • 600g zucchini
  • 200mL soy cream
  • 30g chickpea flour
  • 75g plant-based yogurt
  • salt and pepper
  • vegan grated cheese or breadcrumbs

Preparation

  1. Preheat the oven to 200°C.

  2. Cut the zucchini into slices and place them in an oven-safe dish.

  3. In a bowl, mix the soy cream, chickpea flour, plant-based yogurt, salt, and pepper with a whisk.

  4. Pour the mixture over the zucchini, ensuring it covers evenly.

  5. Cover with 2 handfuls of vegan grated cheese or breadcrumbs and bake for 40 minutes.
