Tahini Pumpkin Spice Stovetop Granola

Ingredients

  • 1.5 cups oats
  • 1/4 cup pumpkin seeds
  • 1/3 cup shredded coconut
  • 1/2 cup chopped dates
  • 1/4 cup maple syrup
  • 1/4 cup tahini

Preparation

  1. Blitz the dates first, then add nuts and oats.

  2. Mix tahini and maple syrup together.

  3. Combine all ingredients.

  4. Toast on a pan over medium-high heat until lightly browned and toasted looking.

  5. Refrigerate overnight to cool.

  6. Serve in the morning with chilled plant-based milk, such as vanilla almond milk.

  7. This can also be used as a topping for smoothie bowls or nice creams, and is great as a quick, light, filling holiday breakfast to save room for feasts like Thanksgiving.
