Tahini Pumpkin Spice Stovetop Granola
Ingredients
- 1.5 cups oats
- 1/4 cup pumpkin seeds
- 1/3 cup shredded coconut
- 1/2 cup chopped dates
- 1/4 cup maple syrup
- 1/4 cup tahini
Preparation
Blitz the dates first, then add nuts and oats.
Mix tahini and maple syrup together.
Combine all ingredients.
Toast on a pan over medium-high heat until lightly browned and toasted looking.
Refrigerate overnight to cool.
Serve in the morning with chilled plant-based milk, such as vanilla almond milk.
This can also be used as a topping for smoothie bowls or nice creams, and is great as a quick, light, filling holiday breakfast to save room for feasts like Thanksgiving.
