Vegan Grilled Cheese with Homemade Mozzarella

Ingredients

Vegan mozzarella

  • 1 can coconut milk (400 ml)
  • 1/4 cup almond milk
  • 1/3 cup nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 3 tbsp arrowroot powder

Vegan grilled cheese

  • 4 tsp vegan butter, or coconut oil
  • 2 slices sourdough bread
  • 1/4 cup vegan mozzarella
  • pinch sea salt and pepper

Preparation

  1. In a blender add coconut milk, almond milk, nutritional yeast, garlic powder, onion powder, sea salt and arrowroot powder. Blend until smooth consistency.

  2. Transfer to saucepan and bring to medium-high heat. Warm mozzarella, stirring often, until thick and stringy in consistency (5-10 minutes).

  3. Butter two slices of sourdough bread on both sides and sprinkle with sea salt. Bring a skillet to medium heat and toast the bread slices until golden in colour, then flip and toast the other side.

  4. Once it's ready, finish by lathering each toast with 2 heaping tablespoons of vegan mozzarella. Season with sea salt and pepper. Then flip one slice of bread onto the other to make a sandwich.
