Easy Homemade Cucumber Vichyssoise Soup

Ingredients

  • 1 lb potatoes
  • 1 cucumber
  • 1 large onion
  • dairy-free butter
  • 2 pints vegetable stock
  • salt
  • pepper
  • 1/2 teaspoon nutmeg

Preparation

  1. Cook the potatoes, cucumber, and onion for 10 minutes in dairy-free butter.

  2. Add 2 pints of vegetable stock and cook until everything is soft.

  3. Add salt, pepper, and 1/2 teaspoon of nutmeg.

  4. Liquidize the mixture.
