Easy Homemade Cucumber Vichyssoise Soup
Ingredients
- 1 lb potatoes
- 1 cucumber
- 1 large onion
- dairy-free butter
- 2 pints vegetable stock
- salt
- pepper
- 1/2 teaspoon nutmeg
Preparation
Cook the potatoes, cucumber, and onion for 10 minutes in dairy-free butter.
Add 2 pints of vegetable stock and cook until everything is soft.
Add salt, pepper, and 1/2 teaspoon of nutmeg.
Liquidize the mixture.
