Filling Potato Salad with Veggies and Herbs

Ingredients

  • 400g potatoes
  • 1 onion
  • 100ml vegetable stock
  • 1/2 cucumber
  • 1tb dill
  • 4tb vinegar
  • 3tb sunflowerseeds
  • Salt, pepper, cumin

Preparation

  1. Cook the potatoes for 20 minutes with salt and cumin

  2. Peel down skin, cut in slices

  3. Cut the onion in pieces and fry in oil

  4. Add the vegetable stock

  5. Let simmer for about 10 minutes

  6. Cut the cucumber in half and then in fine slices

  7. Spice with salt, pepper, vinegar

  8. Chop the dill

  9. Mix all together

  10. Let sit for 1 hour or in the fridge
