Five-Ingredient Vegan Keto Cauliflower Pesto Dip
Ingredients
- Cauliflower
- Pesto (vegan optional)
- Garlic powder
- Toasted pine nuts
- Lemon juice
- Extra virgin olive oil
- Optional: Shredded Parmesan or Manchego
Preparation
Steam cauliflower until tender, drain, and let cool.
Add steamed cauliflower, pesto, garlic powder, toasted pine nuts, lemon juice, and extra virgin olive oil to a blender and purée until smooth. Season with salt and pepper to taste.
If not making vegan, add shredded Parmesan or manchego.
Serve with fresh veggies, gluten-free crackers, or use as a spread on toast or in sandwiches.
