Five-Ingredient Vegan Keto Cauliflower Pesto Dip

Ingredients

  • Cauliflower
  • Pesto (vegan optional)
  • Garlic powder
  • Toasted pine nuts
  • Lemon juice
  • Extra virgin olive oil
  • Optional: Shredded Parmesan or Manchego

Preparation

  1. Steam cauliflower until tender, drain, and let cool.

  2. Add steamed cauliflower, pesto, garlic powder, toasted pine nuts, lemon juice, and extra virgin olive oil to a blender and purée until smooth. Season with salt and pepper to taste.

  3. If not making vegan, add shredded Parmesan or manchego.

  4. Serve with fresh veggies, gluten-free crackers, or use as a spread on toast or in sandwiches.
