Homemade Matcha and Lemon Energy Balls
Ingredients
- 250g cashew nuts
- 100g ground almonds
- 6 Medjoul dates
- Zest of 1 lemon
- 1/2 tbsp Matcha
- 2 tbsp fruit syrup or agave
- 2 tbsp coconut oil, melted
Preparation
Whizz the nuts and dates up in a food processor until finely ground.
Add the rest of the ingredients and process again until well combined.
Form into balls with your hands.
Store in a sealed container in the fridge for up to 4-5 days or freeze for longer storage as they defrost quickly.
