Homemade Matcha and Lemon Energy Balls

Ingredients

  • 250g cashew nuts
  • 100g ground almonds
  • 6 Medjoul dates
  • Zest of 1 lemon
  • 1/2 tbsp Matcha
  • 2 tbsp fruit syrup or agave
  • 2 tbsp coconut oil, melted

Preparation

  1. Whizz the nuts and dates up in a food processor until finely ground.

  2. Add the rest of the ingredients and process again until well combined.

  3. Form into balls with your hands.

  4. Store in a sealed container in the fridge for up to 4-5 days or freeze for longer storage as they defrost quickly.
