Lemon Bliss Energy Balls

Ingredients

  • 1 1/2 cups raw cashews
  • 1 cup shredded coconut
  • zest from 1 lemon
  • 1/4 cup fresh lemon juice
  • 1/4 cup honey
  • 2 tablespoons coconut oil (melted)
  • 1/4 teaspoon ground turmeric
  • 1 scoop protein powder (optional)

Preparation

  1. Add all ingredients to food processor and pulse until combined.

  2. Transfer to bowl, cover and refrigerate for at least 1 hour.

  3. Roll into balls. Sprinkle or roll the balls in shredded coconut or poppy seeds. Store in the fridge, covered for up to 1 week.
