Lemon Bliss Energy Balls
Ingredients
- 1 1/2 cups raw cashews
- 1 cup shredded coconut
- zest from 1 lemon
- 1/4 cup fresh lemon juice
- 1/4 cup honey
- 2 tablespoons coconut oil (melted)
- 1/4 teaspoon ground turmeric
- 1 scoop protein powder (optional)
Preparation
Add all ingredients to food processor and pulse until combined.
Transfer to bowl, cover and refrigerate for at least 1 hour.
Roll into balls. Sprinkle or roll the balls in shredded coconut or poppy seeds. Store in the fridge, covered for up to 1 week.
