Homemade Protein Bars with Emmy's Organics Topping

Ingredients

  • 1 1/4 cup finely ground oat flour
  • 1/4 cup protein powder (plain or vanilla)
  • 1/3 cup honey
  • 1/2 cup natural salted peanut butter
  • 1 tsp vanilla
  • 1-2 tbsp coconut oil
  • 1/2 cup mini chocolate chips
  • Sea salt (optional)

Preparation

  1. In a bowl, mix together the oat flour, protein powder, honey, peanut butter, vanilla, and coconut oil.

  2. Add in the mini chocolate chips and mix with hands until thick and well combined.

  3. Press the mixture into a pan and refrigerate for 2 hours.

  4. Cut into bars and sprinkle with sea salt if desired.
