Cookie Dough Stuffed Dates (Vegan/gluten-Free)

Ingredients

  • 12 oz pitted dates
  • 1 1/3 cup oat flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup mini chocolate chips
  • 2 tsp vanilla extract
  • Sea salt

Preparation

  1. Mix maple syrup, melted coconut oil, and vanilla extract together.

  2. Mix in oat flour until well combined.

  3. Fold in mini chocolate chips.

  4. Cut a slit in each date.

  5. Add cookie dough mixture into the middle of each date.

  6. Optionally, top with melted chocolate.

  7. Sprinkle with sea salt.
