Mango Cashew Slaw Rice Paper Rolls

Ingredients

  • Dipping sauce .Smooth or crunchy peanut butter
  • sesame oil
  • ginger and/garlic
  • black pepper
  • lemon juice
  • soy
  • rice vinegar or apple cider vinegar
  • dash of sweetener
  • hot water
  • rice paper
  • mango
  • coconut

Preparation

  1. Dip each rice paper in warm water for no more than 20 seconds, gently shake off the excess water and place it on a smooth cloth towel. (Ignore mine I swapped to a smoother cloth after the first one)

  2. Place the filling horizontally, Start with softer filling, I have placed mango and tender coconut at the bottom. Now add any crunchy element if any in between before you place other veggies. Here I placed broken cashews and covered it with other herbs and veggies so that the sharp edges of cashews don’t tear the rice paper

  3. Start rolling, overlap the left and right side of the rice paper over the veggies. Now place the southern edge (from your end) over the top and start rolling towards the north (away from you) in tighter actions. Serve on a dry plate or a wooden board whole or cut and serve in bite sized pieces with a dipping sauce. Also do not place on a banana leaf it looks great and everything but they aren’t friends
