Crunchy Toast with a Good Spread of Vegan Cheese Topped with Tamari Mushrooms and Crunchy Chickpeas and Creamy Avocado

Ingredients

  • 200 grams of mushrooms
  • 100 grams of cooked chickpeas
  • 1 glove of garlic
  • 1 tbsp of olive oil
  • 2 tsp of tamari
  • 1 tsp of rosemary
  • 1/2 tsp of smoked paprika
  • 1 tsp of maple syrup
  • pinch of cayenne

Preparation

  1. Add chickpeas to an empty pan and allow them to char on the high heat while you slice mushrooms and mince the garlic

  2. Add mushrooms to the pan with chickpeas, lower the heat to the medium, drizzle with tamari and maple syrup and sprinkle with your prepared spices

  3. Toss to combine

  4. Free a little space on the pan by moving content to the side and add your garlic and drizzle it with olive oil

  5. Cook for 30 seconds or till garlic is fragrant, mix everything together, deglaze the pan with a splash of water and allow it to cook while you toast your bread and slicing the avo(2-3 minutes)

  6. And you are ready to assemble

  7. Spread cream cheese or hummus on the toasted bread, top with mushrooms and chickpeas, add avocado and sprinkle with seeds if desired:)

  8. Enjoy!
