Sizzling Choy Sum

Ingredients

  • 300g choy sum or other leafy green⁣
  • 2 spring onions cut diagonally into thin segments⁣
  • 1 inch piece of ginger sliced into slivers⁣
  • 2-3 (personal preference) cloves of garlic slices into slivers⁣
  • pinch of salt⁣
  • 5 tbs veg oil⁣
  • 2 tbs of light soy sauce mixed with 2 tbsp of hot water⁣

Preparation

  1. Cut stems off of Choy Sum

  2. In boiling water add pinch of salt and 1 tbs of oil then add your choy sum and blanch for 1 minute

  3. Remove and drain then add to a serving plate. Layer the fresh garlic, ginger and spring onion on the top.⁣

  4. In a small sauce pan heat the remaining oil on medium heat

  5. After about 1 minute the oil should be hot enough (test by taking a teaspoon and drizzling a tiny amount onto the veg, if it sizzles its hot enough)

  6. Pour all of the oil over the greens and aromatics, delighting in the sizzle and the smells! Finish by pouring the diluted soy sauce mixture over the greens
