Spicy Cashew Dip

Ingredients

  • 1 1/2 cups raw cashews, soaked at least 8 hours
  • 1/2 cup filtered water
  • 1/2 sweet onion, chopped
  • juice of 3 limes
  • few sprigs of cilantro (about 5 stems)
  • 1 tsp of cumin
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder or 2 fresh cloves of garlic
  • 1/2 tsp of crushed black pepper
  • 1/2 tsp red chili flakes
  • optional: 1/4 cup nutritional yeast
  • optional: 1/4 tsp sea salt

Preparation

  1. Throw cashews in food processor or high speed blender (make sure not to over process) for 10 seconds - until cashews are a little broken up

  2. Then add water, cilantro, onion (and nutritional yeast - if using). Blend some more

  3. In a separate bowl - combine all spices (including garlic - fresh or powder - grind in if using fresh) with lime juice

  4. Once combined - throw in blender until creamy (add water or lime juice if needed)

  5. Chill and enjoy with veggies
