Spicy Cashew Dip
Ingredients
- 1 1/2 cups raw cashews, soaked at least 8 hours
- 1/2 cup filtered water
- 1/2 sweet onion, chopped
- juice of 3 limes
- few sprigs of cilantro (about 5 stems)
- 1 tsp of cumin
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder or 2 fresh cloves of garlic
- 1/2 tsp of crushed black pepper
- 1/2 tsp red chili flakes
- optional: 1/4 cup nutritional yeast
- optional: 1/4 tsp sea salt
Preparation
Throw cashews in food processor or high speed blender (make sure not to over process) for 10 seconds - until cashews are a little broken up
Then add water, cilantro, onion (and nutritional yeast - if using). Blend some more
In a separate bowl - combine all spices (including garlic - fresh or powder - grind in if using fresh) with lime juice
Once combined - throw in blender until creamy (add water or lime juice if needed)
Chill and enjoy with veggies
