Vegan Salad with Tofu and Vegetables
Ingredients
- Cos lettuce
- avocado
- tomato
- red onion
- courgette
- radish
- tofu cubes
- wholegrain croutons
Dressing
- Pizza Express vegan light house dressing
- balsamic vinegar
- lemon juice
- black pepper
- sriracha mayo
Preparation
Grill the courgette until tender.
Fry the tofu cubes until golden.
Chop the cos lettuce, avocado, tomato, red onion, and radish into bite-sized pieces.
If not pre-made, prepare wholegrain croutons by baking or toasting bread cubes.
Assemble all chopped vegetables, tofu, and croutons in a large salad bowl.
In a separate small bowl, whisk together the dressing ingredients: Pizza Express vegan light house dressing, balsamic vinegar, lemon juice, black pepper, and sriracha mayo.
Pour the dressing over the salad and toss gently to combine.
