Chewy Gluten-Free Vegan Peanut Butter Cookies

Ingredients

  • 1 1/2 C @santacruzorganic peanut butter (I used crunchy)
  • 3/4 C coconut brown sugar
  • 1 flax egg (1 TBSP ground flax seed + 3 TBSP warm water, let sit for 10 min)
  • 1/3 c @oatly oat milk
  • 1 TBSP @simplyorganicfoods Madagascar Vanilla
  • 1 C @bobsredmill 1:1 all purpose GF flour
  • 1 tsp baking soda
  • pinch of salt

Preparation

  1. Combine first 5 ingredients using a hand mixer until well combined and fluffy

  2. Add in dry ingredients mixing until just combined

  3. Roll into balls and flatten on parchment lined baking sheet with a fork

  4. Bake in 350 degree oven for 8 minutes
