Chewy Gluten-Free Vegan Peanut Butter Cookies
Ingredients
- 1 1/2 C @santacruzorganic peanut butter (I used crunchy)
- 3/4 C coconut brown sugar
- 1 flax egg (1 TBSP ground flax seed + 3 TBSP warm water, let sit for 10 min)
- 1/3 c @oatly oat milk
- 1 TBSP @simplyorganicfoods Madagascar Vanilla
- 1 C @bobsredmill 1:1 all purpose GF flour
- 1 tsp baking soda
- pinch of salt
Preparation
Combine first 5 ingredients using a hand mixer until well combined and fluffy
Add in dry ingredients mixing until just combined
Roll into balls and flatten on parchment lined baking sheet with a fork
Bake in 350 degree oven for 8 minutes
