Almond Butter Blossom Cookies

Ingredients

  • 1 cup raw creamy almond butter
  • 1 cup coconut sugar
  • 1 flax egg (1 tablespoon ground flaxseeds + 3 tablespoons water)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Brownie batter flavored vegan cookie dough (e.g., from HIIT Nutrition), 1/4 teaspoon-sized ball per cookie for 20-22 cookies

Preparation

  1. Preheat oven to 350°F

  2. Make the flax egg by mixing 1 tablespoon ground flaxseeds with 3 tablespoons water and refrigerate for 10-15 minutes.

  3. After the flax egg has set, combine all the cookie ingredients in a bowl to form the dough.

  4. Shape the dough into 1 tablespoon-sized balls and place them on a baking tray lined with parchment paper.

  5. Bake the cookies for 9 minutes.

  6. Immediately after removing from the oven, top each cookie with a 1/4 teaspoon-sized ball of brownie batter flavored vegan cookie dough and let cool for about 30 minutes.
