Chocolate Chunk Energy Bites

Ingredients

  • 2 cups rolled oats + 1/4 cup pumpkin seeds + 1/4 cup chia seeds
  • Pour into a large bowl with 1/2 cup peanut butter + 1/2 cup pumpkin purée + 1/4 cup maple syrup + 1 tsp vanilla + 1 tsp cinnamon + 1/2 cup dark chocolate chips

Preparation

  1. Blend together 2 cups rolled oats + 1/4 cup pumpkin seeds + 1/4 cup chia seeds

  2. Pour into a large bowl with 1/2 cup peanut butter + 1/2 cup pumpkin purée + 1/4 cup maple syrup + 1 tsp vanilla + 1 tsp cinnamon + 1/2 cup dark chocolate chips (make sure they are dairy free!)

  3. Shape using a cookie dough baller and roll in crushed vegan graham crackers

  4. Store in the fridge, makes 15 bites
