Crispy Baked Smashed Potatoes with Vegan Pesto
Ingredients
- 1 kg small potatoes
- Olive oil
- Sea salt
- Toppings of your choice
Preparation
Bring water to a boil, add the cleaned potatoes and cook them for about 25-30 minutes until they are soft (knife/fork test).
Preheat the oven to 220 degrees Celsius, put the cooked potatoes on a baking tray, smash them down with a potato masher or a bowl, add a drizzle of olive oil and a pinch of sea salt on top of each potato and bake them for about 30 minutes until crispy and lightly browned.
Put them on a plate and top with whatever you want. Just get creative. Today I used vegan pesto and parsley!
