Easy Vegan Blueberry Frozen Yogurt

Ingredients

  • 1 1/2 cup unsweetened plain non-dairy yogurt (I really like @coyo_organic and @foragerproject)
  • 1 cup (140g) frozen blueberries
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • Non-dairy milk to blend (if needed)

Preparation

  1. Spoon the yogurt into an ice cube tray or mini muffin pan and freeze overnight.

  2. Blend the frozen yogurt cubes with the frozen blueberries, vanilla extract, maple syrup, and salt until creamy. Use the tamper and add a splash of non-dairy milk if needed.

  3. Serve immediately or transfer to a piping bag and pipe swirls into a cup or cone.

  4. Pro tip: Use a frosting piping tip to make it feel like you have your own private froyo shop.
