Simple Dutch Oven Spelt Bread
Ingredients
- 2 1/2 cups warm water
- 1 tbs honey
- 2 tsp dry yeast
- 7 cups spelt flour
- 3 tsp sea salt
- 1/2 cup olive oil
Preparation
Mix the water, yeast and honey in a medium bowl and set aside until the yeast activates (foam forms on surface)
Place the flour and salt in the bowl of an electric mixer with a dough hook and gradually add the yeast mix and oil
Knead on low for 10 to 15 mins until the dough is smooth
Place the dough in a large lightly oiled bowl in a warm place and cover with plastic wrap
Set aside for about 2 hours or until the dough has doubled in size
Turn the dough out onto a piece of parchment paper, form into a round and sprinkle with flour
I use a pair of scissors to score the top of the dough
Preheat oven to 240C and place your Dutch oven or heavy based saucepan with the lid in the oven while it heats up
Remove the saucepan from the oven and carefully lift the dough on the parchment paper into the pan
Cover with the lid and bake for 30 mins
Reduce the heat to 220C and remove the lid
Bake for a further 20 mins until the bread is golden
