Honey Spelt Sandwich Bread
Ingredients
- 4 1/2 teaspoons yeast
- 1 1/3 cup warm water
- 1/4 cup honey
- 6 tablespoons unsalted butter or coconut oil
- 2 cups oat milk
- 2 tablespoons white wine vinegar
- 1 egg
- 10 cups spelt flour or 9 1/2 cups all-purpose flour
- 1 tablespoon sea salt
Preparation
Add yeast, 3/4 cup warm water, and honey to a large mixing bowl and mix
Let proof for about 5 minutes until the water turns frothy and yeast is active
Place the milk and vinegar in a bowl and give it a quick stir
Cover and set aside for 10 minutes until the milk starts to curdle a bit
When ready, pour into the yeast mix
Add in the rest of the ingredients and knead until the dough starts to pull away from the side of the bowl
Knead with kneading attachment for 4 minutes
Let rest for 10 to 15 minutes
Knead for another 5 minutes
Lightly grease a large glass bowl
Place the dough inside and cover with clean damp tea towel
Place in a warm area and allow to double in size, about 1 hour
Punch down and divide dough into two equal parts
Place in greased loaf pans
Allow to double and fill the loaf pans
Bake at 210C for 4 minutes
Lower oven temperature to 190C and bake for 25 minutes
If the top starts to brown too quickly, cover with a piece of foil
Pull out and rub a stick of butter over top of bread
Allow to cool on racks
