Sweet Potato, Oat and Quinoa Loaf

Ingredients

  • 1 cup mashed sweet potato
  • 1/2 cup almond milk
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/2 cup olive oil
  • 1 tsp vanilla essence
  • 1 cup spelt flour
  • 1/2 cup oat flour
  • 1/2 cup quinoa flour
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp sea salt

Preparation

  1. Preheat the oven to 180 deg C and line a loaf tin.

  2. Mix the sweet potato, almond milk, eggs, maple syrup, olive oil and vanilla essence with an electric mixer.

  3. In a separate bowl whisk the dry ingredients.

  4. Add the dry ingredients to the wet ingredients and mix well.

  5. Pour into your prepared loaf tin and bake for 40 to 45 minutes until a toothpick comes out clean.

  6. Allow to cool in the tin before turning out.
