Single Serving Avocado Egg Salad
Ingredients
- 1/2 of a small avocado or 1/4 of a large avocado
- 2 hard boiled eggs
- 1 tbsp. mayo
- 1 tsp. lemon juice
- Everything but the bagel seasoning or salt and pepper
Preparation
Toast two pieces of gluten-free bread.
Mash everything together.
Layer the mixture onto the toast.
Top with everything but the bagel seasoning.
