Single Serving Avocado Egg Salad

Ingredients

  • 1/2 of a small avocado or 1/4 of a large avocado
  • 2 hard boiled eggs
  • 1 tbsp. mayo
  • 1 tsp. lemon juice
  • Everything but the bagel seasoning or salt and pepper

Preparation

  1. Toast two pieces of gluten-free bread.

  2. Mash everything together.

  3. Layer the mixture onto the toast.

  4. Top with everything but the bagel seasoning.
