Vegan Cold Rolls with Peanut Sauce

Ingredients

  • mint from my garden
  • arugula
  • pickled red cabbage
  • carrot
  • cucumber
  • tofu
  • red pepper
  • yellow pepper

Peanut sauce

  • 3 Tbsp peanut butter
  • 1 Tbsp sesame oil
  • 1 Tbsp sriracha sauce
  • 2 tsp tamari
  • 1 tsp minced ginger
  • 1 clove garlic, minced
  • 2 to 4 Tbsp warm water
  • pinch of chili flakes
  • sesame seeds
  • skinless shelled peanuts

Preparation

  1. Soak rice paper wrappers in warm water until soft and pliable

  2. Prepare the fillings by washing and chopping the vegetables and tofu into thin strips

  3. Assemble the cold rolls by placing a portion of each filling ingredient onto the soaked rice paper and rolling it up tightly

  4. For the peanut sauce, combine all sauce ingredients in a bowl and mix until smooth, adding water to achieve desired consistency
