Vegan Easter Chocolate Cashew Treats

Ingredients

  • 2 cups cashews, soaked overnight
  • 1/2 cup coconut oil
  • 1/4 cup cacao butter
  • 1 cup dairy-free milk
  • 3/4 cup maple or rice syrup
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • A pinch of fine sea salt

Colors

  • turmeric
  • matcha
  • spirulina
  • fruit powder

Coating

  • 1 cup dark chocolate
  • 2 tsp coconut oil

Preparation

  1. Melt the chocolate and coconut oil for the coating.

  2. Use 3/4 of the chocolate mixture to put into silicon forms and freeze until the chocolate has hardened.

  3. Combine all the filling ingredients, including the colors, in a blender and fill them into the forms.

  4. Freeze again and then cover with the remaining chocolate mixture.

  5. Enjoy!
