Delicious Stick to Your Ribs Comfort Bowl

Ingredients

  • boiled potatoes
  • 1/2 small chopped onion
  • shredded carrots
  • cauliflower rice
  • chopped yellow pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon basil
  • salt and pepper to taste
  • vegan chorizo

Preparation

  1. Sauté onions until translucent.

  2. Add carrots, potatoes, and seasoning; sauté until slightly browned.

  3. Move mixture to the side of the pan.

  4. Add chorizo and warm it throughout.

  5. Combine everything and let it rest for a minute in the pan.

  6. Transfer to a bowl and enjoy.
