Easy Hummus Pasta with Sauce

Ingredients

  • 8 oz chickpea pasta
  • 1/4 cup original hummus
  • Juice of half a lemon
  • 1 tsp hot sauce
  • 1/2 tsp crushed pepper flakes
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/4 tsp garlic powder
  • 1/4 cup sautéed red onion
  • 1/4 cup reserved pasta water
  • Vegetables of choice

Preparation

  1. Cook the chickpea pasta according to package instructions and reserve 1/4 cup of pasta water.

  2. In a small bowl, combine all ingredients except the sautéed red onion and whisk until smooth.

  3. If too thick, add small amounts of the reserved pasta water and whisk until desired consistency is achieved.

  4. Fold in the sautéed red onion.

  5. Pour the sauce over the cooked pasta and vegetables and gently fold together until the pasta is properly coated with sauce.
