Healthy Green Pasta with Vegetables
Ingredients
- 400 g penne pasta
- 1 broccoli (head)
- 3 handfuls of kale
- 3 handfuls of spinach
- 3 garlic cloves
- 1/2 cups walnuts
- juice of a lemon
- 3 tbsp nutritional yeast
- 2 handfuls of basil
- 2 tbsp olive oil
- pinch of salt
- pinch of pepper
- 2 handfuls of mixed green leaves
- handful of mixed seeds
Preparation
Cook the penne pasta according to package instructions until al dente.
Steam or boil the broccoli until tender.
In a blender, combine kale, spinach, basil, garlic cloves, walnuts, lemon juice, nutritional yeast, and olive oil. Blend until smooth to create a green sauce.
Drain the pasta and mix it with the green sauce.
Add the cooked broccoli, salt, pepper, mixed green leaves, and mixed seeds. Toss everything together to combine.
