Healthy Green Pasta with Vegetables

Ingredients

  • 400 g penne pasta
  • 1 broccoli (head)
  • 3 handfuls of kale
  • 3 handfuls of spinach
  • 3 garlic cloves
  • 1/2 cups walnuts
  • juice of a lemon
  • 3 tbsp nutritional yeast
  • 2 handfuls of basil
  • 2 tbsp olive oil
  • pinch of salt
  • pinch of pepper
  • 2 handfuls of mixed green leaves
  • handful of mixed seeds

Preparation

  1. Cook the penne pasta according to package instructions until al dente.

  2. Steam or boil the broccoli until tender.

  3. In a blender, combine kale, spinach, basil, garlic cloves, walnuts, lemon juice, nutritional yeast, and olive oil. Blend until smooth to create a green sauce.

  4. Drain the pasta and mix it with the green sauce.

  5. Add the cooked broccoli, salt, pepper, mixed green leaves, and mixed seeds. Toss everything together to combine.
