Homemade Edamame Pesto with Basil and Lemon

Ingredients

  • 1 cup edamame (out of the pods, duh)
  • 1 1/2 cup basil
  • 1/4 cup nutritional yeast
  • 2 tablespoons hemp seeds
  • Juice from 1/2 lemon
  • 1-2 garlic gloves
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Olive oil to thin out

Preparation

  1. Combine everything except oil in a food processor or high speed blender.

  2. Blend the mixture.

  3. While blending, gradually add olive oil until desired consistency is reached.

  4. This is a really fun take on pesto and I truly love the result! I hope you enjoy!
