Healthy Protein Pumpkin Pancakes
Ingredients
- 1 egg
- 1/4c organic buckwheat flour
- 1/4 zucchini (grated) *optional for extra volume*
- 1tsp @navitasorganics Maca powder
- 1/4c pumpkin purée
- 1 scoop @highperformancenutrition vegan pumpkin spice protein powder
- Water to consistency
- 1/2tsp baking powder
- Cinnamon
Toppings

Preparation
In a bowl, mix together the dry ingredients: buckwheat flour, baking powder, cinnamon, maca powder, and protein powder.
In another bowl, combine the wet ingredients: egg, pumpkin purée, and add water to reach the desired consistency.
If using zucchini, grate it and fold it into the batter.
Heat a non-stick pan or griddle over medium heat.
Pour the batter onto the pan to form pancakes and cook until bubbles appear on the surface, then flip and cook the other side until golden brown.
Serve the pancakes with the prepared toppings.
